Paleo Banana Bread

Paleo Banana Bread (paleo, gluten free, dairy free)

I’m celebrating the arrival of spring in Malmö with this unbelievably delicious clean banana bread from @jen_pbrunner. Perfect for fika, dessert, or breakfast on the go!
3/4 tsp of baking soda
3/4 tsp baking powder
1/2 tsp of sea salt
1 tsp cinnamon
1/4 tsp nutmeg
3/4 cup (2 dl) almond flour
1/4 cup (1/2 dl) coconut flour
2 very ripe bananas
2 large eggs
2 Tbsp melted coconut oil
1/4 cup (1/2 dl) maple syrup
1 tsp vanilla
Preheat oven to 350 F/175 C.
Oil a loaf pan or line with parchment paper.
In a medium bowl add baking soda, baking powder, salt, cinnamon, nutmeg, coconut flour and almond flour. Stir to mix. In a small bowl mash your bananas. Add the eggs, coconut oil, maple syrup and vanilla. Mix well. Add the wet ingredients to the dry and stir to combine. Pour into the loaf pan and bake for about 50 minutes or until a toothpick comes out clean. Let cool for 20 minutes before removing from the pan, slicing and serving!
