Paleo Chocolate Muffins
Makes 10-12 Cupcakes
Fluffy chocolate muffins made with only 8 ingredients that are grain-free, dairy-free, and refined sugar-free! Perfect for a snack or breakfast on the go, or top with your favorite clean frosting for a healthier alternative to traditional chocolate cupcakes. I like to use ground vanilla beans instead of vanilla extract and raw cacao powder instead of cocoa to keep things as minimally processed as possible, but it definitely increases your costs.
2 1/4 cups (5.5 dl) almond flour
1/4 cup (.5 dl) raw cacao or unsweetened cocoa
1/2 tsp baking soda
1/4 tsp ground vanilla bean, or 1 tsp vanilla extract
1/4 cup (.5 dl) melted coconut oil
1/4 cup (.5 dl) pure maple syrup
3 large eggs
Optional: dark chocolate chips for that extra somethin somethin (make sure to check ingredients if sensitive to gluten or dairy)
Preheat oven to 350 F/175 C.
Line your muffin pan. Mix together dry ingredients in one bowl and wet ingredients in another before adding the wet to the dry and mixing well to combine. Stir in chocolate chips if using. Spoon batter evenly into the muffin liners and bake for 20 minutes or until the center is set. Remove from oven and allow to cool slightly before serving. Store in an airtight container at room temperature.
