Power Pancakes (lactose free, gluten free, nut free, sugar free)
Makes 4 medium pancakes
These pancakes get their power from the protein in the cottage cheese and the fiber in the oats. They don’t have any flour or sugar. And the best part is that they look, feel, and taste like regular fluffy pancakes! I don’t even like cottage cheese but I loooove these.
2 eggs OR 3 egg whites
1/2 cup (1 dl) oats (can sub gluten free)
1/2 cup (1 dl) cottage cheese (I used 2%, can sub lactose free)
1/2 tsp vanilla
1/2 tsp cinnamon
Coconut oil to coat pan
Honey/pure maple syrup/nut butter/berries for serving
Blend all ingredients until you have a thick smooth batter. Pour medium sized pancakes onto a pan coated with coconut oil over medium heat. Flip when starting to bubble and cook for a couple more minutes. Serve warm!
*These aren’t sweetened at all since there’s something about a little bit of topping that truly makes a good pancake in my opinion. And with a delicious topping like syrup or berries, who needs sugar in the batter?
