Raw Gingerbread Bites

Raw Gingerbread Bites (raw, vegan, paleo, dairy free, gluten free, sugar free)
Makes 16-18 bites

I love gingerbread cookies, especially the Swedish pepparkakor. But this year, instead of devouring an entire bucket of those thin and crispy gingery morsels, I went with a batch of @rabbitfoodformybunnyteeth no bake, raw, vegan, paleo, gluten-free, and refined sugar free gingerbread bites- and they are absolutely delicious! Double the recipe and give them away to friends and family for a healthier holiday treat.

1+1/4 cup large soft dates, pitted
1 cup raw almonds
1/2 heaping tsp ground ginger (adjust to taste)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
1/4 tsp vanilla extract

Finely chop almonds in a high quality blender/food processor. Add the rest of the ingredients and blend until the ingredients are combined and the mixture balls up. Roll into balls (rub some coconut oil on your hands if the mixture is sticky) and store in the refrigerator!
