Raw Vegan Lemon Bars

Raw Vegan Lemon Bars 🍋  (raw, paleo, gluten free, dairy free, nut free, vegan)
Makes 12-16 bars

Base:
1 cup unsweetened shredded or flaked coconut
1 cup raw rolled oats (can sub reg or GF oats, or almonds for paleo)
Zest of 1 lemon
Juice of 1 lemon
1/2 cup (1 dl) large soft dates (medjool works great)
3 Tbsp hot water
3 Tbsp coconut oil, in any form
Pinch of sea salt

Icing:
1 cup unsweetened shredded or flaked coconut
Zest of 2 lemons
Juice of 2 lemons
1/4 cup (.5 dl) maple syrup
3/4 cup (<2dl) melted coconut oil

For the base: Use a food processor to blend coconut, oats and zest until fine. Add the remaining base ingredients and mix until a sticky dough forms. Press into a square baking tin lined with parchment paper and stick in the freezer while you make the icing. You don’t need to wash the food processor.
Icing: First blend the coconut and zest in the food processor until fine. Add the juice, syrup and oil, and blend until you have nice thick white icing. Don’t worry about getting a smooth texture. Remove the base from the freezer and pour/spread over the icing. Place back in the freezer for 10 minutes until the icing has hardened. Then cut into pieces and store in the fridge.
