Roasted Brussels Sprouts
Serves 2-3 as a side dish

I couldn’t stand brussels sprouts until I tried roasting them with olive oil and lemon. And I’m so glad I did, because this cruciferous vegetable is extremely good for you!

15-20 Brussels sprouts, trimmed and halved lengthwise
2 Tbs olive oil
2 Tbs fresh lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp freshly ground pepper
Sea salt, to taste
Preheat oven to 400 degrees F/205 degrees C. Combine the brussels sprouts, oil, lemon juice, and seasonings in a bowl. Toss to coat. Spread the brussels sprouts out evenly on a roasting pan or baking sheet. Roast for 20 minutes, stir the sprouts around, and then roast for 10 more minutes. They should be nicely browned but not burnt! Remove and add salt to taste. Serve warm.
