Soft & Gooey Paleo Cinnamon Rolls

Soft & Gooey Paleo Cinnamon Rolls (paleo, gluten free, dairy free)
Makes 9-10 rolls

Here it is! Like a mini, much healthier @cinnabon with a cinnamon coconut glaze. Thank you #paleogrubs for changing my breakfast life with this creative recipe.
2 Tbsp melted coconut oil
1 egg
1 Tbsp honey
1 tsp vanilla
1.5 cups (3.5 dL) almond flour
1 Tbsp coconut flour
1 tsp baking soda
Pinch of sea salt
Honey for drizzling
1/4 cup (1/2 dL) finely chopped walnuts
1/4 cup (1/2 dL) chopped dates
1 Tbsp cinnamon

2 Tbsp coconut cream (scrape the top off chilled coconut milk)
1 Tbsp honey
Pinch cinnamon
*If using separated coconut milk to get coconut cream, place your can of milk in the fridge ahead of time!*
Whisk coconut oil, egg, honey, and vanilla in a medium bowl. Add both flours, baking soda, and sea salt. Stir until a dough forms. Roll dough out between two sheets of baking paper into a rectangle. Drizzle over the honey and sprinkle over the walnuts, dates, and cinnamon. Using the baking paper, roll the rectangle into a long log. Place the log into the freezer for 15 minutes to harden and make it easier to slice into rolls. Preheat oven to 325 degrees F/165 degrees C. Remove log from the freezer and slice into 9-10 rolls. Place rolls on a lined baking sheet and bake for 15 minutes. Meanwhile, make the glaze by whisking together the coconut cream, honey, and cinnamon until thick and smooth. Remove the rolls from the oven and spread over the glaze. Eat immediately! Store in a container in the fridge.
