Super Easy Beet Fritters (gluten free, dairy free, nut free, vegetarian)
Makes about 8 Fritters
This delicious and healthy vegetarian dish is ready in under 20 minutes! If you’re looking to add #meatlessmonday to your week, beet fritters are a great choice, giving you essential minerals and vitamin C from the beets, protein from the egg, and fiber from the oats. This recipe is stripped down to the basics to make it quick and easy, but you can always add fresh onion and garlic instead, and throw in other ingredients such as beans, corn, seeds, ginger- whatever you want!
2 large or 3 medium uncooked beets, shredded
1 large handful gluten free oats
Sprinkle of sea salt, ground pepper, onion powder, and garlic powder
Preheat oven to 350 degrees F, 175 degrees C.
Stir all ingredients together, shape into patties, and place onto a lined baking sheet. Bake for 12-15 minutes, until browning on top and dry to the touch. Serve with crumbled feta or fried halloumi slices, a sauce for dipping, or my personal favorite: guacamole! A fried egg on top is also a delicious way to boost the protein even more.
