Super Easy Ginger-Soy Chicken
This is my go-to recipe for a quick and tasty chicken dish. Serve with some brown rice, quinoa, or a simple salad. I usually make a peanut sauce to go with it…that post will have to come later!
4 boneless, skinless chicken thighs
2 Tbs soy sauce
1 Tbs ginger, peeled and grated
2 gloves garlic, peeled and minced
Salt and freshly ground black pepper
Olive oil to coat skillet
Make the marinade by stirring together the soy sauce, ginger, and garlic. Add salt and pepper to taste- I usually skip the salt because soy sauce is already so salty. Cut up the thighs into pieces and add to the marinade. Make sure all the pieces get fully coated. Cover and leave at room temperature for 30 minutes. (You can also refrigerate and let marinate overnight.) Coat a skillet with the oil and set to medium heat. Once hot, carefully add the thigh pieces and any marinade left in the bowl. Cook for about 10-12 minutes, stirring the pieces around frequently to make sure the chicken cooks evenly. Cut into a big piece to make sure the chicken is fully cooked before serving.
