Swedish Shrimp Salad (Skagenröra) (gluten free, lactose free, nut free)
This is my take on a classic Swedish dish. It’s summery, light, and easy, and can be served with crackers or toast as an appetizer, or piled inside a baked potato as a meal. The traditional recipe uses mayonnaise and creme fraiche, but I love using avocado to get my healthy fats.
1 heaping Tbsp Greek yogurt or quark (can sub lactose free)
1 Tbsp fresh lemon juice
Salt and pepper to taste
1 large handful cooked and peeled shrimp (cut into pieces if using large shrimp)
1 Tbsp fresh dill, finely chopped
Mix avocado, yogurt, lemon juice, salt and pepper, and dill in a bowl until smooth. Add the shrimp and toss lightly. Garnish with some extra dill and serve as an open faced sandwich, on top of lettuce, or piled inside a baked potato.
