Sweet Potato Pizza Crust (vegan, gluten free, dairy free, vegetarian)
Makes 1 medium pizza
Get your beta carotene (which we convert into the all important Vitamin A) from this delicious and easy pizza crust.
2 small sweet potatoes (500g)
1 cup (2.5 dl) gluten free oat flour (make your own by blending gluten free oats)
1/2 cup (1 dl) almond flour
1 Tbsp chia
1 Tbsp olive oil
1 Tbsp apple cider vinegar
Seasonings, to taste (salt, pepper, garlic powder, oregano)
Preheat oven to 400 F/205 C. Make a chia egg by mixing 1 Tbsp chia with 3 Tbsp water and putting in the fridge for 10 minutes.
Peel and slice the sweet potatoes into small cubes. Boil until tender. Drain and add to a bowl. Mash. Add oat flour, almond flour, chia egg, olive oil, and apple cider vinegar. Mix well. Add seasonings to taste. Scoop dough onto a lined baking sheet (parchment, not foil, to prevent sticking) and use your hands (helps to get them wet first) to shape it into a pizza. Mine was about 1 cm thick. Bake for 20 minutes, until the edges start to brown. Add your desired toppings and bake for 8-10 more minutes.
