Sweet Potato Toast! (vegan, paleo, gluten free, dairy free, sugar free)
I had my doubts, but turns out it really does work to toast a slice of sweet potato! Use a large sweet potato that you can cut evenly lengthwise into 1/2 inch (about 1 cm) pieces. Toast on the highest setting for as many times as needed until you get a slice that is crispy on the outside but bendy and somewhat soft on the inside. For me it took four rounds. Then top with your favorite sweet or savory toppings!
