Three-Ingredient Pancakes + Peanut Butter (gluten free, dairy free, nut free, sugar free)

Oats with banana and a side of eggs is a great option for a nutritious breakfast. But why not just combine those ingredients to make the easiest pancakes ever! No flour, no dairy, no sugar. Heart healthy oats give you long-lasting energy, and by adding peanut butter you get an extra boost of protein and healthy fats.
1 cup gluten free oats
1 heaping Tbsp natural peanut butter, optional
Coconut oil, to coat skillet
Dark chocolate chips, optional
Mash the banana. Add oats, eggs, and peanut butter. Mix well. Heat a skillet coated with coconut oil over medium heat. Cook the pancakes, flipping after 1-2 minutes. Serve warm with chocolate chips or your choice of toppings. Make a big batch and store in the fridge for a great snack to have on-the-go.
