Tofu Nuggets

Tofu Nuggets (vegan, gluten free, dairy free, nut free, vegetarian)

A healthy and vegetarian way to enjoy crispy nuggets! Super easy to prepare and a great way to introduce people to tofu. Cooked quinoa is a nice breading replacement instead of breadcrumbs or panko for anyone with allergies, plus it’s a great way to use up that leftover quinoa. Adapted from @kacey_thecookiewriter

One packet extra firm tofu, pressed and drained to remove water
Your favorite thick, healthy sauce
1/2 cup cooked quinoa (I used tricolor quinoa)

Preheat oven to 425 degrees F/220 degrees C. Line a baking sheet with parchment paper or a silicone mat and place a wire rack on top.
Cut the tofu into cubes/nuggets of desired size. Coat with your favorite thick sauce (BBQ, peanut, sweet chili, hoisin) and then roll in the cooked quinoa. Place on the rack and press quinoa into any uncovered spots. Bake for 20 minutes or until quinoa is browned and crispy. Eat plain, roll into a wrap, or serve with more sauce for dipping.
