Vegan Almond Cookies
Makes 14-16 cookies
Whip up these four-ingredient cookies in 20 minutes! They don’t taste like ‘healthy cookies,’ even though they’re vegan, gluten free and refined sugar free. They simply taste like delicious cookies that are reminiscent of macaroons. A bite-sized treat to sweeten your week! Adapted from @thekitchn
2 cups (4.5 dL) almond flour
1/2 tsp baking powder
5 Tbsp maple syrup
2 tsp vanilla
Preheat oven to 350 degrees F/175 degrees C.
Stir all ingredients into a sticky dough. Place small balls of dough into a lined baking sheet and lightly press them down. Bake for 12-15 minutes, until edges are golden brown. Remove from oven and let cool for a couple of minutes before removing from the baking sheet. Store at room temperature for up to 4 days.
*Add orange or lemon zest to the dough before baking for a citrusy twist, or drizzle melted dark chocolate over the cookies after cooling.*
