Vegan Blender Banana Bread (vegan, gluten free, dairy free, nut free, sugar free)

Ok this is my easiest banana bread yet, in hopes that superstar goalkeeper @adelaidegay will change her mind about healthy banana bread. This is a moist and dense loaf that’s super filling and requires minimal clean up- my favorite kind of recipe!
*For a non-vegan recipe simply replace the flax eggs with regular eggs- this will give you a darker loaf with a more traditional texture.*
2 cups gluten free oats
1/2 tsp baking soda
1/2 tsp cinnamon
Pinch sea salt
2 large bananas
1 tsp vanilla
2 flax eggs (mix 2 Tbsp ground flax with 5 Tbsp water)
Maple syrup or dark chocolate to sweeten, optional
Preheat oven to 350 F/175C.
Make flax eggs and set aside.
Blend oats, baking soda, cinnamon, and sea salt into a flour. Set aside. Blend bananas, vanilla, flax eggs, and maple syrup (if using). Add the oat flour back to the blender and pulse until combined. Here you can mix in your chocolate chips or nuts if using. Scoop into a greased loaf pan and bake for 25 minutes or until a toothpick comes out clean.
