Vegan Pear Cake (vegan, gluten free, dairy free, sugar free)
It’s pear season 🍐 so I whipped up this super easy and delicious cake that’s only sweetened by pears and full of healthy clean goodness. Yes, that means you can eat it for breakfast!
4 medium pears, roughly chopped
1/2 cup (1 dl) nut butter (I like cashew butter because it’s mild flavor allows the pear flavor to shine)
2 tsp vanilla extract
1.5 tsp cinnamon
1 tsp ground ginger
1/2 tsp salt
3/4 cup (2 dl) almond flour
1/2 cup (1 dl) gluten free oats
Preheat oven to 350 C/175 F.
Make a pear purée by blending 3/4 of the pear pieces. I used a food processor, but it should work in a good blender, you just might want to peel them first. Mix the purée with the nut butter and vanilla. Stir in the cinnamon, ginger, salt, flour, oats, and the remaining chopped pears. Pour into a cake pan lined with parchment paper and bake until the cake is firm to the touch and starting to brown on top, about 25-30 minutes. Allow to cool slightly before slicing and serving. Cut into bars for breakfast on the go!
