Zucchini Pizzas (vegan, paleo, gluten free, dairy free, nut free, vegetarian)
Zucchini is the perfect nutrient rich and low calorie base for your favorite pizza toppings. Choose the fattest zucchini in the shop and slice into 1 cm (1/2 inch) rounds. Preheat oven to 425 F/220 C. Add pizza sauce, cheese, chopped mushrooms, pepperoni, etc to your zucchini. I can highly recommend a sprinkle of garlic salt! Bake for 15-10 minutes, until the cheese is golden brown. Let cool slightly before serving.
